Guys, I’m finally getting my act together over here and giving you a summer recipe that doesn’t involve a stove or an oven and is cold and refreshing. OH.EM.GEE. I know. Plus I needed a post that would get all the buzzwords out in it. VEGAN! DAIRY-FREE! FOUR-INGREDIENT! NO-BAKE! Ok, now that my buzzword Tourrettes is taken care of let’s actually get down to business. As I’ve mentioned before, I have family members (and friends) who are sadly afflicted with lactose-intolerance. {sigh} a moment of silence please. For my family members it snuck up on them rather suddenly. In one, it appeared, disappeared for several years, and then reappeared. Tell me that isn’t just the worst. One day you’re enjoying an ice cream cone and the next it’s trying to kill you from the inside out. The worst.
Now, this is just me personally, but almond milk, soy milk, and coconut milk based ice creams just really don’t do it for me. I know they’re not necessarily “healthier” than full-fat ice cream, but they always felt kind of thin. Also, coconut milk based ice creams just taste like freakin’ coconut and nothing else and that is a tragedy of epic proportions. And then I started juicing. Wait, don’t go I promise this all makes sense. Most juice cleanses give you this ultra decadent cashew milk for your evening final juice and then it hit me. This is the perfect, most decadent version of a dairy free milk that has ever walked the planet. And then I tarted it up and poured it in a milkshake glass and called it a day. You’re welcome.
- ½ lb raw cashews
- cold water for soaking
- 2 frozen bananas
- ½ cup pitted dates
- 1 tsp cinnamon (optional)
- ¼ cup Biscoff spread (optional)
- Place cashews in a large bowl and cover with enough cold water by an inch. Let soak at room temperature for 6-8 hours.
- Drain water and fill up with fresh water (filtered if your tap water isn't good) and place in fridge to continue soaking for another 4 hours or overnight.
- Once thoroughly soaked and chilled place cashews and soaking water in a blender and blend until smooth.
- Meanwhile, chop frozen banana into chunks. If dates are dried soak in 1 cup boiling water for 5 minutes to soften.
- With blender running add frozen bananas. Drain dates and add well. Taste for sweetness, you may want to add more dates, or agave nectar if that's your thing.
- If you want to take this over the top, add 1 tsp cinnamon and ¼ Biscoff spread and blend until smooth. Serve immediately.
